  • There are endless ways to enjoy oyster mushrooms but simply sauteeing them and adding them to a great piece of toasted bread highlights the taste and texture of these fungi:

    -After washing, remove tougher stems from caps with scissors (reserve for stock if it isn’t going into the compost bin)

    -Tear the caps with your hands into strips

    -Saute in olive oil in a medium/hot pan with onion or garlic (or both) until thoroughly browned

    -Deglaze with a favorite wine or beer (optional)

    -Finish with a pat of butter (optional)

    -Spoon onto toasty bread (sourdough is a favorite of ours)

    -Top with fresh herbs from the garden or try a smear of goat cheese to complement these bad boys
