Golden Oyster (Pleurotus citrinopileatus)

Golden oysters are a seasonal variety at AVM and should be cooked shortly after getting them home. These oysters are a tropical variety with smaller yellowish caps and lighten in color when cooked. They have a complex flavor profile ranging from citrus notes to cashews depending on the person.
